These cookies really are yummy and easy to make. They are lower in calories than most cookies, which is always a good thing when you are perpetually always trying to lose weight, like me!
Basic Icebox Sugar Cookies
Recipe from Cooking Light
Yield
2 dozen (serving size: 1 cookie)
Ingredients
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
4 tablespoons stick margarine, softened
2/3 cup sugar
1 teaspoon vanilla extract
1 large egg white
Cooking spray
Preparation
Combine the first 3 ingredients in a bowl, and set aside. Beat margarine at medium speed of a mixer until light and fluffy. Gradually add sugar, beating at medium speed of a mixer until well-blended. Add vanilla and egg white, and beat well. Add flour mixture, and stir until well-blended. Turn dough out onto wax paper, and shape into a 6-inch log. Wrap log in wax paper, and freeze for 3 hours or until very firm.
Preheat oven to 350°.
Cut log into 24 (1/4-inch) slices, and place slices 1 inch apart on a baking sheet coated with cooking spray. Bake at 350° for 8 to 10 minutes. Remove from pan, and cool on wire racks.

mommy mistakes
I'm a walking mistake factory. Seriously. I would say that I make mistakes on a daily basis.
My biggest mistakes are probably my mommy mistakes. Let's see-- Junior & Adrian regularly are called by the wrong name (oops), I feed Junior various things for breakfast (his favorites include leftovers from the night before, hot dogs, macaroni and cheese, cereal, instant oatmeal), sometimes they run around naked (and like it), Junior absolutely loves george lopez, he can sing the theme song to CSI (oops)! I could go on.
Part of being a good mother certainly has to be making mistakes. I'm not perfect by any means at all, but I really try not to let my mistakes define my parenting.
Parenting... it's definitely the best thing I will ever do in my life, the most rewarding, but the hardest. For sure.

1. If you were to have a scholarship created in your honor, what qualities would you look for in applicants (leadership, service, GPA, etc.)? Applicants would definitely need to be well rounded. Good grades don't necessarily indicate a good applicant. Someone who was able to multitask-- a combination of keeping up with their grades and remaining involved somehow.
2. Who would be eligible to apply for your scholarship (members of a certain major, ethnic group, sexuality, etc.)? Anyone.
3. Would it be need-based or not? Why? Not necessarily. I think that need based scholarships are great, but there are a lot of students out there who are limited with their schooling options simply because their parents may make income too high, but they are not willing to assist their child with the schooling costs.
4. What would you call it? Scholarship? Haha. Probably like the "Scholarship for the Well Rounded Student".
5. If you made applicants write an essay, what would the topic be? It would definitely be a free writing essay where they could write about any topic so desired: serious, humorous, about themselves. It would be a great indication of their personality.

i've been bad...
I confess: I've been a bad blogger, but to be honest, life has been absolutely crazy. Like many others who have really been hit by this economic crisis, we too have been touched. My husband was laid off last week and there are probably negative jobs available in his field.
While we are trying to truck through this madness, I'll secretly admit that it is nice to have him home (although a paycheck is nicer) and we are very thankful for both unemployment and our tax refund. Of course, having multiple jobs myself makes it easier, and in the quest to be the woman with the most jobs ever, I have a job interview on Monday.
My big dilemma is that I have to give a 3-5 minute nonacademic presentation. Any suggestions?

doing the ChaCha
I know people are always looking for work from home opportunities and tucked away in the thousands of scams that are out there, you can actually find some legit opportunities.
But here's definitely one to check out: ChaCha. It's a great way to earn some money while you are taking some time out on the Internet anyway!
Here's the deal: people call or text in questions that they may have, anywhere from "who was the 3rd president of the United States?" to "what's wrong with my foot? it's purple, green, and blue." As a guide, your job is to find the answer (quickly), and send them a text message back (all from the web). Your pay rate is per question, so the faster you are, the more you make! You set your own schedule, you are your own boss, and hey, who doesn't want to be your own boss?
