There is just something about mashed potatoes that warms my heart. No, really. I love them. They are one of my comfort foods, definitely.
But on my journey to getting fit and skinny and all that stuff, a suggestion that Jillian Michaels heartily recommends is trying to substitute cauliflower for the potatoes in the equation. And at first, I was very adamantly against this. I mean, seriously. How could you? But then, thinking about the starchy potatoes, I thought.. okay, okay. I'll try it.
And it was love at first bite.
No, seriously. The texture is very similar to mashed potatoes, the taste (dare I say it?) was just a tad bit better, and my pickier than picky husband even loved them! Try them. You will love them.
Cauliflower Purée
- serves 4 -
Ingredients
1 head of cauliflower
2 TBLSP "I Can't Believe It's Not Butter"
Splash of Milk
1 teaspoon salt
1/4 teaspoon pepper
dill
Procedure
1. Bring a large pot of water to boil.
2. Chop up cauliflower. (If you are cynical about this, you can add a few potatoes to give it a more mashed potatoes consistency!)
3. Bring cauliflower to a boil; cook until tender.
4. Drain water. Add butter, dill, salt, pepper, and splash of milk.
5. Mix.
6. Don't stop mixing. No, seriously. It takes a bit longer to get it nice and creamy and mashed. Keep mixing until desired texture. Add more milk if necessary.
7. Eat and enjoy. Then tell me you love me, because seriously, it's that good.
